EasyCheck represents the latest innovation in determining tartaric and calcium stability in wine.
Tartaric stability is associated with precipitation phenomena caused by potassium and tartaric acid naturally present in wine. These two substances are naturally present in grapes but do not come into chemical contact; however, when grapes are pressed, they mix, potentially leading to potassium bitartrate precipitation issues. This precipitation is a slow process that can occur in the winery after must fermentation or directly in the bottle, after the wine has been bottled and reaches the shelves. While this phenomenon does not cause any organic harm to the wine, visually, the product is not considered of good quality and is not accepted by increasingly discerning consumers and the market.
EasyCheck is an ultra-compact analyzer that operates with just electrical power and sample cooling. It is fast, easy to use, providing repeatable stability measurements with electronic record-keeping capability.
Steroglass Research & Development, relying on the fact that heating is significantly faster and more linear than cooling when assessing the solubility of a salt in a liquid, has developed an innovative method. This method allows the EasyCheck analyzer to exploit the properties of saturation temperature, thereby limiting the inhibitory effects of factors that counteract calcium tartrate precipitation and enabling very short analysis times, on the order of two hours. The evaluation of calcium stability will then be analyzed as a function of wine saturation temperature. Comparative tests conducted on numerous samples, also in collaboration with certified laboratories, show complete agreement between the results of the main precipitation tests and the innovative EasyCheck method.

The working principle of EasyCheck is to promote the precipitation of potassium tartrate by adding an excess of THK. Stability measurement is then derived from determining the electrical conductivity of wine under different temperature conditions.
